VEGETABLE PATTY.

If you are a working women, student,bachelor trying to make it big in the city or simply a stay at home mom we all know the pain of " What to make for the lunch-box ?"
This Recipe is an answer to it. The beauty of this Recipe is that you can add every vegetable to it at hand or can create it's sister version by adding meat to it, Ofcourse the steps and procedures will change accordingly . The crispiness of this dish is it's USP" Crunchy outside,fluffy inside " these veg patty 's will make your tastebuds dance. Plus it becomes a great evening snack Recipe too, to go with your chai or coffee.
Just like Pav-Bhaji we can add so many vegetables, Paneer or Tofu and create many new variations of our choice.So let's begin:

COOK TIME : 15 MINUTES
TOTAL TIME : 25 MINUTES

SERVING : 4 - 6 PEOPLE

CALORIES :400 to 420.
INGREDIENTS:
- Cauliflower : 1 cup (finely chopped)
- Cabbage : 1 cup (finely chopped)
- Potatoes : 1 cup ( boiled and mashed)
- Carrot : 1 cup ( finely grated)
- Green peas : 1 cup( boiled and mashed)
- Onion 1 cup ( finely chopped)
- Tofu or Paneer : 1 cup ( mashed - optional)
SPICES TO BE USED :
- Red chili powder : 1TBSP or according to the heat you require OR( You can use Mint Chutney as I use)
- Turmeric : 1/2 TSP
- Black pepper powder : 1/2 TSP
- Salt : To taste
- Oil : 4 to 5 TBSP
- Starch powder or All purpose flour, Or even soy flour: 5 TBSP ( For coating and binding)
PREPARATION :
- In a big bowl mix all of the above ingredients cauliflower, cabbage, carrots, mashed potatoes, mashed tofu or paneer, green peas boiled and mashed.
- (if the mix is bit wet to the touch, you can add 1 to 2 bread slices to suck the moisture from it)
- Next add the spices, check the salt and the heat (add red chili powder or the mint chutney if you have it at hand)
- Add the binding agent ( you can add starch powder or All purpose flour)
- Create a slurry paste of the binding agent to coat the patty. ( Add salt and black pepper powder to it for better taste)
- Take a pan, heat it on medium flame and add 2 to 3 TBSP oil to it,once when the oil is heated to required consistency, add the Patties to the pan.
- Shallow fry the patties till golden brown, turn and fry them to get even coat.
- Serve hot with Pudina Chutney or your favorite sauce.
VEGETABLE CUTLETS FROM THE NIGHT LEFTOVER:
- Step 1 : Use the night leftover vegetables and mix with mashed potatoes and binding agent ( all purpose flour or soya flour or corn starch.)
- Step 2 : Add the spices if needed, check the salt at this stage.( Can add mint chutney too.)
- Step 3 : Heat oil in pan,dip the cutlets in slurry paste of all purpose flour (flour of your choice).
- Step 4 : Fry evenly from both sides and serve hot with the favorite sauce.
- Step 5 : If refrigerating, let it cool down completely before storing. (Re-heat before eating)
🎯 You can also create Veg-Patty by using night leftover vegetables 👌 😋 mixed with mash potatoes,add soy flour or gram flour to make it crispy.
🎯 Always have Green chutney OR Mint chutney prepared at home.

Can be used with dosa,idli, green chutney sandwich and even in Pulao. Meat or chicken recipes.

🎯 you can add or minus any veggies according to your taste (You can also add soya flour to the binding mix or use mashed egg instead of Tofu and Paneer to create your version of the Patty)
